Peanut Butter Oat Flour Cookies by Cindy Flores Martinez



Did you know you can make flour from cooking oats? When the stores here in Los Angeles ran out of bread recently, I decided to make some at home, but I couldn’t find flour, either. So I searched online for alternatives and learned that oat flour was the next best thing. Following the directions, I blended cooking oats in my blender and used the flour in recipes. I loved it! Here’s one of my favorites.

Peanut Butter Oat Flour Cookies

1/2 cup peanut butter

2 TB butter or coconut oil, melted

1/4 cup sugar (add more if you prefer a sweeter cookie)

1 tsp vanilla

1 egg

1 cup oat flour

Mix the peanut butter, butter (or coconut oil), sugar, vanilla and egg in a mixing bowl. Add the oat flour and blend well. Shape the mixture into balls and use a fork to flatten them in a crisscross pattern. Note: dipping the fork in sugar helps keep the fork from sticking to the cookie.

Bake about 10 minutes in a 325 F oven or until lightly browned. They’re crumbly when warm, so allow them to cool completely.

  3. These sound yummy! The oat flour from scratch explains why I hadn't been able to find old fashioned gluten free oats lol. I have a feeling a lot of people were on to that idea. :)
    I final was able to buy a bag this past week. I like to have a bowl of oatmeal everyday.
