This is great collection of Christmas stories that everyone will enjoy! I had the privilege of reading In Time For Christmas by Mona Risk and Christmas in Walnut Creek by Raine English and loved them both. I'm definitely looking forward to reading more of the stories in this wonderful collection.

I truly enjoy reading Christmas stories and when the opportunity arose to preview Shanna Hatfield's "Saving Mistletoe," I couldn't resist! I'd already pre-ordered this collection, and was thrilled to read Shanna's new novella! She's an amazing author and I've read most of her books. This story was sweet, clean read and drew you right in to it. Who doesn't like to read about a hunky, hottie police officer who's a real cowboy?? I'm currently working on the rest of the series and we're off to a great start! Don't hesitate to add this to your Christmas reading collection!

Loving Winter by Lyn Cote
This delightful story was a wonderful example of how mentoring can change a life for the better and how overcoming past disappointments can lead to wonderful new surprises. The three main characters, Winter, Clay, and Kaitlyn, are very well developed, and I cared about each one of them. I hope the other novellas in this collection are as interesting as this one. i can't wait to find out.

Loving You at Christmas by Kristin Wallace is the final book in her Shellwater Key Tales series and the only book I have read in the Sweet Christmas Kisses 4 set so far. Kristin has done it again. She has written a romance story with all the normal insecurities and troubles of real life. Her characters are well developed and the story is well written. The story grabs you and you feel what the characters are feeling. I definitely recommend reading this story. Kristin's stories are easy to get caught up in. I finished this one in one day.

Although I have not been able to read the complete collection, I was able to read Milou Koenings' The Gift of Yesterday and I loved it. This short story carries a huge dose of reality and it's done amazingly well.

Spicy Sausage Quiche - #Breakfast #Recipes for a Crowd

For me, October is a month full of entertaining. I have over a dozen friends and family members who celebrate birthdays this month. With those parties in mind, I thought I’d share one of my “recipes for a crowd.” This quiche is always a hit! Since the holidays are quickly approaching, you might want to print out the recipe and tuck it away for your next family gather. Happy eating!   

Spicy Sausage Quiche for a Crowd


Yield: 2 quiches (6-8 servings each)

1 1/2 pounds bulk mild pork sausage
12 eggs
2 cups small-curd cottage cheese
3 cups pepper jack cheese, shredded
1 cup mozzarella cheese, shredded
1/2 cup all-purpose flour
1/2 cup butter, melted
1 teaspoon baking powder
2 cups fresh mushrooms, sliced
1 medium onion, minced
1 4 ounce can chopped green chilies, drained
4 tablespoon Parmesan cheese, optional
Green and red pepper strips for garnish, optional

1.     In a large skillet, cook sausage over medium heat until no longer pink. Drain and set aside.
2.     Coat the inside of 2 round 9-inch baking dishes with cooking spray. Set aside.
3.     In a large mixing bowl, beat eggs, cheeses, flour, butter, and baking powder until well combined. Stir in mushrooms, onions, chilies, and cooked sausage.
4.     Divide mixture evenly into 2 greased baking dishes. If desired, sprinkle the top of each quiche with 2 tablespoons Parmesan cheese.
5.     Bake at 375º for 35 – 40 minutes or until a knife inserted near the center comes out clean. Garnish with pepper strips if desired.

Heart Healthy Creamy Chicken Recipe by Melinda Curtis

My husband had a heart attack two days before Christmas last year. Since then, we've attempted to eat healthier, which is a challenge, because my husband loves creamy sauces and fried foods.

Here's a recipe he loves made with spaghetti squash and spinach. The cheese gives this dish a creamy texture, and the chicken helps fill him up.

Ingredients

  • 1-2 cups cooked diced or shredded chicken (depending upon how filling you want the dish to be)
  • 3.5 pounds uncooked spaghetti squash, halved
  • 1 tsp extra virgin olive oil
  • 1 small uncooked onion, finely chopped
  • 2 cups grape tomatoes, halved
  • 2 cloves garlic, chopped
  • 6 ounces fresh baby spinach (about 6 cups)
  • 15 ounces part-skim ricotta cheese
  • 1/2 cup part-skim mozzarella cheese (divided for topping)
  • 3 tbsp grated Parmesan cheese, (divided for topping)
  • 1/4 cup basil, fresh, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
Instructions:
Heat oven to 400 degrees

Put squash halves on a microwave safe plate, cut side down; microwave on high until tender and squash can easily be scooped out with forks (8-12 minutes).

Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Cook onion, stirring occasionally until golden and tender, approximately 5 minutes. Stir in tomatoes and garlic. Cook, stirring frequently until tomatoes begin to soften, approximately 3 minutes.

Add spinach, cook, stirring just until wilted, approximately 1 minute. Remove pan from heat.

Scoop spaghetti strands from squash into skillet. Toss to coat. Stir in ricotta, 1/2 cup mozzarella, 2 tbsp Parmesan, basil, salt and pepper. Add chicken.

Transfer to a 2-3 quart baking dish. Sprinkle with remaining mozzarella and Parmesan. Bake until bubbly around the edges and top is light golden brown, 15-20 minutes.

I hope you enjoy this recipe as much as we do. The only time I'm reluctant to make it is when I'm on deadline (like this week!).

Hello! I’m so happy & honored to be part of the FOURTH Sweet Christmas Kisses box set. This has become an annual tradition and it’s always exciting.
 
 
 

LOVING YOU AT CHRISTMAS is part of my Shellwater Key Tales series. In fact, it’s the final book in the series. The series started out as a trio of books revolving around 3 childhood best friends who return to their hometown in Florida (Left Turn At Paradise, Straight On Toward Paradise, Last Stop At Paradise) and become involved in reviving the old Paradise Dinner Theatre. Then the series grew to include a companion novel to Book 1 (Coming Home To Paradise), which I developed from scenes I’d removed from the original draft. I also published 2 holiday novellas (Finding You At Christmas & Falling For You At Christmas).
 
When I launched Last Stop At Paradise earlier in the year, I really thought that was the end. It even said “Last Stop” in the title. Then I realized I needed to write another holiday novella for Sweet Christmas Kisses (cue ironic laughter). I wasn’t ready to launch a new series, so what to do? Thankfully, I also realized I had one more character floating around the Shellwater Key universe. Annaliese Matheson showed up in Left Turn At Paradise, but along the way I kind of lost track of her. She’s a former Broadway star and friend of director Grayson Kendall who comes to Shellwater Key to star in the first show. Annaliese has a bit of a tragic history. Her beloved husband Matthew – who was also a Broadway star – died suddenly right in front of her. Devastated by the loss, Annaliese left the stage behind. It’s only when Grayson asks her to star in his show that she reluctantly returns.
 
I loved the idea of giving Annaliese a happily ever after. Of course, I needed a man for her…and oh boy…did I come up with a good one. Enter John-Luke (Duke) Evans, former pro football player. It’s hard to think of two people who could be more different than a stage actress and an athlete. Duke is sooooo different from her first husband. How could she fall for someone who is such a polar opposite? Well…sometimes it just works and the differences are things that make them stronger as a couple. It doesn’t hurt that Duke Evans is SUPER hot. I mean, really…he’s delicious and sexy. I think you’ll love him, too.
 
Here’s an excerpt with just a taste of their chemistry:
When Annaliese’s cell rang later that evening, she knew who it was without glancing at the screen. She took a couple of breaths, deliberately letting the phone ring a few times, before answering. “Hello?”
“Meet me at the parking lot on the south end of The Strip.”
Such arrogance. She wasn’t going to make it that easy for him. “Who is this?”
Duke Evans’ husky laugh sent fingers of sensation running all over her body. Maybe she shouldn’t go. This kind of chemistry might be dangerous, especially coming off such a long period of…nothing. Especially when the man in question was so different from Matthew in every single way. It wasn’t logical or reasonable.
“Annaliese, I’m too old to play games,” Duke Evans said, though the thread of amusement remained in his voice. “I need to see you.”
Okay fine, no games on her end, either. “I’m not sure that’s wise, Mr. Evans.”
“Who said we need to be wise, Ms. Matheson?”
Arrogant, sure, but he was also charming, and smart. It was an intriguing combination. “I don’t think I’m ready. My husband died and—”
“It’s a stroll on the boardwalk, surrounded by hundreds of people who will be focused on the Christmas lights and whatever senior-citizen musical group Shellwater Key can put together.”
“Now who’s playing games?” she countered. “I don’t know that I can handle this…handle you.”
She heard the quick, indrawn breath on his end. “You really shouldn’t say things like handle me, Ms. Matheson. I might get ideas.” His voice had grown even huskier. “Listen, I’ve been surrounded by little girls for the last six months. There’s a chance I won’t know what to do with you.”
Annaliese laughed at such an outright lie. “I’ll believe that when Hell freezes over, but all right, I’ll meet you in thirty minutes.”
“Ten minutes.”
“Twenty-five.”
“Fifteen.”
Annaliese glanced in the mirror, caught a glimpse of the ecstatic grin on her face, and quickly readjusted her expression. She also noticed her wrinkled clothes and unkempt hair, a result of a full day of extreme nervousness and pressure. “I’m a wreck. I don’t know what I can accomplish in only fifteen minutes.”
“You could show up wearing a potato sack and I wouldn’t care,” he said, sounding impossibly arrogant and commanding and so sexy she almost whimpered. “And don’t you dare touch your hair. Be there in fifteen minutes.”
“I don’t think I like it when a man tells me what to do.”
“Annaliese.” He laughed again, sounding both frustrated and amused. “Just be there in fifteen minutes or I’ll come to you.”
“You don’t know where I live.”
“This is Shellwater Key, I can find out your address in about five minutes,” he said. “If you’re scared of being in public with me, just think about having me in your place.”
The thought of having him anywhere made her blood sizzle, and she did whimper this time. “You shouldn’t say things like that, either.”
“Fifteen minutes, Annaliese. That’s as long as I’m prepared to wait.”

A Christmas in Montana is my novella in this year’s Sweet Christmas Kisses 4 anthology.  I’ve written over thirty-five contemporary romance books now, often set in small towns or ranch country.  Since I love the Rockies and grew up with horses and lots of other animals, I love incorporating those elements into my stories. A Christmas in Montana is a loosely connected preview for my Heart of the Rockies series, which thus far includes full-length sweet romance titles Comeback Cowboy and A Montana Legacy.  But more are coming!




Though I grew up in the Upper Midwest, I love writing about ranches, cowboys and veterinarians and have used those elements in a number of my books.   I got my first horse at the age of six, and in our small Minnesota town it was like giving a child car keys, because off I went riding bareback through winter spring, summer and fall, every day, with friends who also had horses. What a Tom Sawyer experience that was.  That whole distant, western suburb of the Twin Cities is now highly developed into beautiful homes—the lakes, hills and abundance of trees made it perfect for that.  But back in the 1960s it was still undeveloped, with quiet roads.  I grew up swimming my horse in the lakes, riding all day long, having adventures, and perhaps it’s a miracle that I survived them all! Looking back, I’m amazed that my parents gave me all that freedom, but times were different then and I wouldn’t change these experiences for anything!


I also began showing, eventually upgrading my horses with whatever money I could save, then moved into raising, training and showing quarter horses.  After marriage, my husband and I raise quarter horses, some paints, and then thoroughbreds for several decades before finally dispersing our breeding stock.  We’ve never been without horses, though...our kids had them while growing up and we still have three.  Just doing chores and seeing them in the pasture makes me feel so at peace.  So, when I do write contemporary romance set in the West—on a ranch, or somewhere in the Rockies, I get to write about the kind of life I love.  I hope you will enjoy reading A Christmas in Montana!

A Cowboy for Christmas

A COWBOY FOR CHRISTMAS (Serendipity, Indiana--Book 9) features Hannah Kincaid. Her twin sister, Taylor, is the heroine in Book 8, ONCE UPON A TIME. 





In Taylor's story we eventually learn that Hannah has her eye on a certain tall, tanned cowboy. Just out of college, the twins are living with their parents and working local jobs while searching for something better. Below is a snippet in Taylor's point of view, when she first gets an inkling that her twin is hiding something. 


Upstairs, we lounged in my room. Hannah was pleased about Ken changing my hours. “Now you’ll understand what it’s like to have a real job. That eleven a.m. start was a joke.”


I took one of Opal’s diaries out of the trunk. “I’m going to save every penny toward our place in the city. You are too, right?”


Hannah looked away, back to the laptop she had been staring at. That was suspicious.


“What are you doing?” I peered over her shoulder before she could move to another tab.


Horses? Why are you reading about horses? Is Francie starting a trail ride service through the tree farm?” B&B guests stayed in miniature cabins secluded in the Christmas trees. It was quaint and seriously dull, but the new-ish addition to the farm seemed to be doing really well for the Standish family. Francie was energetic, and since taking over the farm operation from her mom, she’d added a fall festival. So the trail ride idea wasn’t unbelievable.


“Won’t that be a mess when people swarm all over the farm on foot, in December?” I shivered at the idea of stepping in horse-stuff while looking for a Christmas tree. Or dragging the tree along, and then-smoosh.


Hannah slammed her laptop shut. “No, Francie isn’t starting trail rides. You don’t know everything I’m interested in, Taylor. Just because we’re out of school doesn’t mean we stop learning about stuff.”


Whoa. Somebody was defensive. “I’m just surprised. Didn’t know you ever did research that wasn’t about celebrities or fashion.”


She flipped her hair behind her shoulder. “I’m evolving.”


Then I knew. “Okay, who’s the guy? Let me guess—somebody who works for Francie commutes on his horse.”


Her face was red. “Of course not.” She knew it was pointless to try to keep holding me off. We could never keep secrets from each other. In a way it felt like being untrue to ourselves to be less than fully honest with our twin. That was inconvenient sometimes. For Hannah, now was one of those times.
