Easy Summer Recipe by Cindy Flores Martinez



Now that the hot summer weather has arrived, I’ve stopped using the stove as much as usual, and I haven’t used the oven at all. But since avoiding cooking altogether is impossible, I try to prepare quick meals.

One of my favorite recipes for summertime is chicken wraps. They’re so easy to make and you don't need to use the stove. Today, I'm sharing the recipe...

Easy Chicken Wraps

Ingredients:

Flour tortillas
Pre-cooked rotisserie chicken
Mayonnaise 
Nuts and seeds of your choice (walnuts, pecans, pumpkin seeds, sunflower seeds, etc)
Optional—dried cranberries and/or chopped apple

Directions:

Cut the chicken into small pieces.

Add mayonnaise to your liking, depending on whether the chicken is already flavored or unsalted.

Add the remaining ingredients. (My favorite combination is pumpkin seeds and walnuts).  Blend well.

Heat the tortilla in the microwave with coconut oil (or in a pan on the stove if you prefer), spread the chicken mixture over it and roll it up.

  2. Yum! Easy and delicious! I went to lunch with friends (it's a pot-luck thing we do) and one of them brought smoked turkey wraps. She's spread cream cheese on soft tortillas and layered on smoked turkey slices, rolled up, sliced. They were very good! Thank you, Cindy, for the recipe!

  5. With a few minor alterations I could make this--I have to be gluten free. Have you ever tried subbing guacamole for the mayo? Thanks for the recipe.
