Six week muffins

As Thanksgiving is coming closer, you'll probably appreciate anything that saves time, so I thought I'd share this recipe with you. It's called Six Week Muffins because I was told that it can keep in the fridge for up to six weeks. However, I never tried that - they are so good that they are always gone within two days . . .

1 box (15 oz) bran (with or without raisins)
3 cups sugar
5 cups flour
5 teaspoons baking soda
1 teaspoon salt
1 cup oil
4 eggs, beaten
1 quart buttermilk

Mix dry ingredients in a large bowl. Stir in oil, eggs, buttermilk. Use immediately or store in a covered container in a refrigerator for up to six weeks, using as needed. (Do not freeze).

Fill greased muffin tins to the top and bake at 400 degrees F for 18 to 20 minutes.

My host mother gave this recipe to me when I stayed in the US for the very first time, and it's become a traditional family recipe for us - perfect to take along to parties and picnics etc. . . .

And don't forget that you can use the time you saved for your favorite books!
