Soda Cake by Cindy Flores Martinez

For a while now, I’ve seen recipes going around on the internet for Soda Cake in which you mix a can of soda and a box of cake mix to make a cake. It sounded too good to be true, but I decided to try it, and I took pictures so that I could share the results with you.

I have to admit, I was skeptical when I first saw the Soda Cake recipe. I’ve tried so many recipes that use substitutes, and they usually turn out awful. I thought there was no way a cake would turn out okay with just a can of soda and not the other ingredients that the directions call for.

For my experiment, I chose a box of lemon cake mix and ginger ale. I decided to use half the mix from the box because I didn’t want to have a whole cake lying around, especially if it wasn’t edible. I also used half the amount of ginger ale.

Original Ingredients
1 box lemon cake mix
12 ounce can ginger ale

After emptying the cake mix in a bowl, I poured the soda over it, and it started fizzing up a storm. When it settled down, I stirred the mixture until it resembled cake batter and then poured it into a glass pan with non-stick spray.




Afterwards, I placed it in the oven, which was preheated, and baked it for 28 minutes according to the directions on the box. By the way, I read that 15 minutes works best for some ovens.

The end result surprised me. It was a cake, and it was delicious. I liked it better than the regular kind. And I discovered that people have been baking cakes like this for years. I’m glad I finally caught on.

    1. You definitely have to try it. It's delicious. And there are so many different flavor combinations suggested online. I found someone who used root beer and vanilla cake mix to create a root beer float flavor.

  2. Soda cake is also a popular weight watcher recipe. Just use any can of diet soda.

    1. I forgot to mention that in the blog post. I read that too. Using a can of diet soda cuts down on the calories even more.
