Avocados—A Quick and Easy Lunch! By Raine English

When I’m working on a book, I hate to take time off for lunch, so I usually go for something quick and easy—an avocado. They’re protein rich and carb free. However, I like a little variety with my food, so I’m always looking for new ways to eat them. One of my favorites is to mix a chopped avocado with a can of tuna, add some fresh basil, a little salt and pepper, then serve on a bed of lettuce or in a tomato wrap. It’s quick, easy, and delicious, and best of all, I’m back to work in a flash.

  2. I love Avocados, Raine. Just had 1 yesterday in the most delicious salad with crabmeat from Legal Seafoods restaurant in Boston.

  4. Avocados are my favorites. I like to have them on bread that's toasted with coconut oil and topped with the avocado and mozzarella cheese. I also like to add a small amount of salsa, especially the kind that's made with mango.
