Celebration Cake .....Roxanne Rustand

My daughter Emily and I are both writers, and we are both avid cooks. It's such fun to talk about writing...and to share recipes with each other! I love baking on these cold, wintery days. How about you?

Emily asked me to make this cake for her birthday in January, and I'm going to make it again as cupcakes this Saturday, when we wish our grandson a happy birthday. What child wouldn't like LOTS of sprinkles?!  There are lots of variations of this type of recipe online. This a combination of several, with my own tweaks as well. Homemade is so much better than buying a mix!

Confetti Celebration Cake

Combine:

2 Tbsp lemon juice plus enough 2% milk to total  1 1/2 cups.
Set aside to curdle a bit. You could also use 1 1/2 cups buttermilk.



Beat until very fluffy:
1 cup regular salted butter
1 2/3 cups Splenda  or 1 1/2 cups sugar
4 tsp real vanilla
1/2 tsp almond flavoring
4 eggs plus one extra yolk

Mix dry ingredients in a separate bowl:
2 1/2 cups all-purpose flour
1/4 cup  cornstarch
2 tsp baking powder
2 tsp salt

Alternately add half of the flour mixture and half of the milk mixture to the fluffy butter and egg mixture, blending gently with each addition, then repeat.
Gently stir in 1 to 1 1/4 cups colorful sprinkles (the tiny oblong ones, not the teensy little round ones that are like tiny BBs. NOT the sparkly sugar crystals, either.)
 I just looked on Amazon and noticed some sprinkle listings call them "jimmies." Valentine's Day is coming up soon--you could buy all red sprinkles then! You can find them for whatever color theme you need.
Divide batter into three well-greased 9" pans. Bake at 350 degrees for 30-35 minutes --until a toothpick comes clean in the center. Frost with your favorite frosting after completely cool.
