Coconut Cream Pie Bites by Shanna Hatfield

coconut tart platedAh... summertime. When it's hot and you're lethargic and the last thing you want to do is hang out in the kitchen.
Here's an easy recipe for an unbelievably scrumptious  dessert, especially if you love coconut.
Coconut Cream Pie Bites
1 small box coconut instant pudding
2 cups milk
4 ounces cream cheese
2 cups heavy cream
1/2 cup powdered sugar
shredded, sweetened coconut
48 mini fillo shells (or a 9-inch graham cracker pie crust)
* Note – You can use tart shells or a pie crust, your choice.
Mix the pudding and milk together. Let pudding rest about ten minutes.
Use softened cream cheese and mix it into the pudding until thoroughly blended on medium speed. (You don’t want to beat the pudding to death). Set aside.
Whip the heavy cream until it forms stiff peaks, add the powdered sugar and stir it in. Add half the cream to the pudding mixture and gently blend.
My preference is to cover this tightly and refrigerate overnight before serving. If you are in a hurry, you don’t have to wait. Fill tarts or pie crust. Top with remaining whipped cream.
Sprinkle with coconut. You can toast it or not, whatever floats your boat. You could also add slivered almonds or a drizzle of chocolate. I chose to add dark chocolate curls and a few sprinkles of coconut. That turned out to be tasty decision.
Makes 48 mini tarts or one yummy pie.

I Scream, You Scream...

by Shanna Hatfield

 Happy National Ice Cream Month!

I recall chanting that line a few times in my youth, but I didn't realize it was a song published in the 1920s, written by Howard Johnson, Billy Moll, and Robert King. It also has ties to Eskimo Pies. Originally called   "Temptation I-Scream Bar," the frozen chocolate-covered confection was created by Christian Kent Nelson in 1919.

Although I had no idea about the song or Eskimo Pies when I was a little girl, I did have quite a thing for ice cream.

Way back when I was growing up on the family farm, the Schwan’s delivery man used to come by our house every two weeks. I thought he was a superhero! There was no mistaking his truck as it drove down our road, dust clouds swirling, letting us know he was on the way. My little head would fill with visions of all the wonderful frozen treats tucked inside his magic truck. He’d come to the door, take Mom’s order and then quickly return, arms laden with frozen canisters of pure delight.

As wrong as this is going to sound, Mom used to buy two or three of their big cans every time he came. They weren’t gallon size. They were even bigger. To my little 6-year-old head, they could have been 40-gallon drums. All I knew is that more ice cream had arrived!

In the evenings, when the work was done and dusk settled around us while streaks of pink, orange and gold brushed the sky as the sun dipped behind the hills, we’d indulge in a bowl of ice cream - black cherry, marshmallow ripple, strawberry.  If we hadn’t worked (and played) so hard, we probably would have all weighed 500 pounds. As it was, I enjoyed it while it lasted. It gave us something fantastic to look forward to every day.

Vanilla was always my favorite flavor. Boring? Yes. But with plain vanilla ice cream you get so many possibilities. You can add fruit or chocolate, nuts or candy pieces, tasty syrups and yummy toppings. You can smoosh it between two cookies, top brownies, and dollop it on pie.

Now, my absolute favorite flavor of vanilla ice cream comes from the Tillamook County Creamery Association. If you like vanilla, you will go loopy over their old-fashioned vanilla ice cream. It is a spoonful of amazing summer memories in every bite.

A few months ago I discovered Caramel Cone from Häagen-Daz. It's got pieces of crushed waffle cone, caramel and chocolate - and it is sooo good.

I'm also not opposed to making ice cream. My sister-in-law used to make banana ice cream for random, special occasions. I would beg and beg for her to make it because it was incredibly yummy and so different from any other ice cream we had.

A few years ago, she kindly shared her recipe with me, which I promptly included in my book The Cowboy's Summer Love and I'll share it with you today. WARNING - it does contain raw eggs.

https://savvyentertaining.com/2012/04/13/banana-ice-cream/

Banana Ice Cream
5 eggs
2 1/2 cups sugar
4 cups whipping cream
1 tsp. salt
2 tsp. vanilla
2 tsp. banana flavoring
4 cups milk
4 ripe bananas, mashed
* Warning! Consuming raw eggs may increase your risk of food borne illness.   If you do decide to make this and use the raw eggs, please choose eggs that are fresh with no cracks in the shell.
Start by beating the eggs until they are foamy and light. I let mine go about six minutes. Add in sugar and continue mixing. Slow the speed on the mixer and add in the cream followed by the salt, vanilla and banana flavoring. Continue mixing and add in the milk, blending in the bananas last. Pour into your ice cream freezer and freeze according to machine directions. (Makes about five quarts.)
  What is your favorite flavor?
Do you have any fun or funny ice cream memories from your childhood?

Books! and Prizes! - by Magdalena Scott

My local library does a summer reading program. When my son was young, he participated each year. What fun it is for the kids to be rewarded at the end of summer. Read a few books, get a few rewards. Reach the big goal and receive a nice bag of goodies.

Sometimes the goodies are super awesome, like a coupon for a free ice cream at the local soda fountain (my favorite). There was usually a free swim night at the local pool too.

This year I decided (thank you, nice library desk lady) to join the adult version of the summer reading program. In order to "win," I only have to read six books and write reviews of each of them. I'm halfway to the goal.

The books don't have to be from the library, so I'm reading some books I've purchased as well as some from the library. Stephen King's On Writing fits both those categories. First, I read the library's copy, and then I decided to buy one to keep. (I think I gave away a first edition when we downsized, but--oh well--now I have the Tenth Anniversary Edition.)

I'm enjoying a nice mixture of fiction (romance, mystery) and nonfiction (writing stuff).

It's cool to get rewarded for reading, but of course the best prize of all is the reading itself. (Though I wouldn't turn down a coupon for ice cream.)

Do you and/or your family participate in a summer reading program? If so, is it through your library, or a bookstore? Is there ice cream involved?

He's Hot, I'm Not

by Shanna Hatfield

The annual battle of the thermostat has begun in our normally happy home.

You see, Captain Cavedweller runs a little on the warm side (like ten degrees higher than normal people - that's right, I said normal people!).

In the winter, as I sit bundled up with multiple layers of sweaters and heavy socks and fuzzy slippers, he parades around the house in gym shorts and a muscle shirt. Unless the temperature is below freezing, he won't even bother with a coat when he's outside.

When the heat of the summer descends on us, things really heat up around our house. The battle of wills and control of the thermostat begins.
My beloved starts cranking down the A/C as soon as it hits 80 outside. We've had triple-digit temps this week, so things have been especially challenging.

While I'm tucked away in my office, frantically working on whatever project is taking all my attention at any giving moment, he's doing his best to turn me into a human popsicle.

When my teeth start to chatter, I sneak over to the thermostat and boost it back up to a setting 90 percent of the population would find pleasantly cool.

I'll settle back into my office chair and barely return to work before a cold blast of air blows over me from the vent by my desk.

It makes me think of that fun scene from Father of the Bride II.

Steve Martin is caring for his pregnant daughter and wife and they want the house cold. Really cold. Freezing cold.

Rather like the inside of my not-so-cozy home.

I think I'm losing the battle to regulate the thermostat.

How can I tell a man who has spent the last ten hours outside, most of the afternoon in 103 degree temperatures, that I'm a bit chilly and he needs to deal with it?

If anyone drops by for a visit this summer, don't be surprised if I answer the door wearing a winter coat and warm gloves. I might even have some hot chocolate to share with you.

Have you ever had a thermostat war? Do you run hot or cold?
