A quick and easy corned beef and cabbage recipe by Josie Riviera


Here’s a go-to recipe for the month of March, when all roads lead to St. Patrick’s Day, and “Irish Eyes Are Smiling.”

I always make a traditional corned beef and cabbage recipe for St. Patrick’s Day. Although my husband and I are not Irish, our daughter attended university in Ireland and now lives there. So, what better way to celebrate this traditional Irish holiday than with food?



Ingredients:
2 lb. Corned beef brisket with a spice packet
8 Red potatoes
6 peeled and cut carrots
1 cabbage

Place the corned beef in a large pot. Cover with water, and be sure to add the spice packet. Cover and bring to boil, then simmer several hours until tender.

Add potatoes and carrots. When vegetables are close to tender, add cut wedges of cabbage and cook 30 more minutes.

Place meat in platter, vegetables in bowl, and add your favorite Irish soda bread. Mustard is always good, served on the side.

  1. My hubby is Irish, and I have a little Irish ancestry, too. Our house is filled with Irish stuff because we inherited it from my mother-in-law. She was Irish through and through.

    1. Merrillee, that's lovely that your house is filled with Irish stuff. My daughter lives in Northern Ireland, so I always pick up things to take home whenever we visit.

  2. My family does just corned beef & potatoes. I use 1 or 2 cans of corned beef (lazy way out). I boil about 2 lbs of potatoes pealed & cut in enough water to cover. When potatoes are about halfway done add chunked corned beef when potatoes are done you should have a nice thickened hearty stew.
