Silver White Cake #Recipe AND a New #SweetRomance Release


If you’re a frequent visitor to my blog, you’ll probably remember that my dad had a boisterous personality and a huge love of food, both traits he passed on to me. On Easter Sunday, I found myself missing my beloved dad, who went to heaven a few years ago, so in his honor I baked a Silver White Cake. I slathered the top with butter cream frosting and sprinkled it with flaked coconut, Dad's favorite! Eating this cake made me smile. 

Silver White Cake

2 cups all-purpose flour
1 1/2 cups sugar
3 1/3 teaspoons baking powder
1 teaspoon salt
1/2 cup shortening
1 cup milk
1 teaspoon vanilla
4 egg whites

Heat oven to 350º F. Prepare a 13” x 9” baking dish with cooking spray.

Beat together the flour, sugar, baking powder, salt, shortening, milk, and vanilla in a large mixing bowl with electric mixer on low speed for one minute, scrapping bowl often. Turn mixer to high and beat for two minutes. Add egg whites and beat for an additional two minutes. Pour batter into pan.

Bake until toothpick inserted in center comes out clean, approximately 35-40 minutes.

Cool before frosting.

Note: If a layer cake is preferred, divide batter into 2 9” round pans and bake for approximately 30 min.
