We are still waiting for sandals and shorts weather here--with many chilly, rainy days with highs still in the low fifties, so we haven't been using the charcoal or pellet grills much.

PECAN CHICKEN
4 boneless skinless chicken breasts
For dipping:
3 eggs, beaten
1/2 cup milk
1 cup coarsely ground pecans
1/2 cup fresh grated parmesan (not the dry, grated kind in a shaker can
1/2 cup flour
Directions:
1. Combine dry ingredients in a shallow dish
2. Combine eggs and milk in a separate shallow dish
3. Flatten thicker part of chicken so it's all mostly uniform but not thin 4. Dip pieces into milk & egg mixture
5. Coat pieces in dry mixture
6. Lay them gently on a rack for coating to "set."
7. Heat peanut oil to moderate-high temp in a frying pan
8. Cook chicken until golden brown on both sides and an
instant-read thermometer reads 165 degrees.
