Jingle bells, jingle bells.... by Roxanne Rustand

I love the Christmas theme running through recent posts here! Each fall, I count the days until we have lovely cold weather and I can bring out the heavy flannel sheets...then I look forward to lots of snow.  Must be my Minnesota blood, but it just doesn't seem like Christmas if we don't have a beautiful blanket of snow!

This photo is from last winter--we haven't had ice yet this year, and  have only had a brief dusting of snow.  But just looking at the photo makes me excited about decorating, Christmas cards, and gift wrapping. And the baking....oh my! I love that, too.

With Christmas carols on the radio and a mug of hot chocolate close by, it's perfect timing to be writing the Love Inspired Christmas-themed novel that will be out in November of 2016,  I so love writing Christmas books!

Do you have favorite cookies that you make every year? The following recipe is one I have been making for decades because it is just sooo easy to work with.  You can rolls out the leftover bits over and over, and it is still easy to handle, which makes it perfect for making cookies with your kids. Although I use real butter in every recipe I can, I recommend following this recipe without substitution.

Roxanne's Christmas Cut-out Cookies

1 cup white Crisco (not butter flavored)
1 1/2 cups sugar
2 eggs
1 tsp real vanilla
2 Tbsp milk

Cream well, then add the dry ingredients:
4 cups flour
1 1/2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt

Roll out, cut into shapes, and bake 8-10 min at 350.

I just love red hots....can you tell which one is going to mine?  <vbg>

Now I need to bake these, and get back to writing!

Wish you all the happiest of holidays,
Roxanne Rustand

  1. I used to make these, Roxanne, though I always used butter. I know it doesn't look the same but I love butter! Now I make fudge.

    1. I use butter too--in every cookie except this one...which didn't work out. But now I'm going to try your way again! You are a super cook, Lyn--whenever I make a pie, I think of you! :)

  3. The only problem with them is that I am a red hots--aholic, and I cannot leave them alone. :) :)
