Independence Day Recipe by Donna Fasano

Independence Day is a big deal here in the United States. Americans celebrate our nation’s independence with family picnics, music, laughter, fun, and fireworks. July 4th is a national holiday and we take full advantage of it!

Here’s a recipe to one of my picnic favorites.

Chicken Salad

4 cups chopped, cooked chicken
1 ½ cups chopped celery (leafy tops included)
½ cup toasted nuts (walnuts or pecans are great, so are sunflower seeds)
6 slices crumbled, cooked bacon
Salt and pepper, to taste
1 ¼ cups sour cream
¼ cup mayonnaise
¼ cup ricotta cheese (optional, see note below)

Mix together first 5 ingredients. Stir together the sour cream, mayonnaise and ricotta cheese until well blended.  Add to chicken mixture. Chill before serving.

Note: If ricotta cheese is omitted, double the amount of mayonnaise.

  1. Thanks for the recipe, Donna. It sounds delicious. Now, if I could just get someone else to make it for me . . . . The Fourth is my birthday, so I usually refuse to cook on that day. Happy Independence Day, everyone!
